Just hoping there is a way to view the pro charts away from the game without having to transcribe them by hand.

It could go something like this:
1. Export the DLC song you bought on your console to a flash drive. Keep in mind that pro guitar upgrades are a separate file from the base DLC.
2. Connect that flash drive to your computer.
3. Use appropriate software to extract the contents of the DLC package (ie. for Xbox 360 files, you'd use a program like Le Fluffie).
4. Import the extracted pro guitar MIDI into EOF. If you just wanted to see the tablature, this gets you to that point. If you want to use the tablature in another way, continue on.
5. Enable EOF's preference to save Rocksmith 1 files and save the project. EOF will create an XML file for each of the pro guitar/bass tracks.
6. Use the Rocksmith custom toolkit to "compile" the XML files into SNG files. Then go to the "SngTab" tab of the toolkit, select each SNG file and it will create an ASCII representation of the arrangement, which you could import into a tablature program like Guitar Pro. Alternatively, you can try the Rocksmith Tab Explorer program (https://github.com/andulv/RSTabExplorer/releases), although that may require you to build a complete Rocksmith custom song package first. I'm also not aware of it being able to save the tablature at this point.

Hacked consoles only unfortunately. Rocksmith customs are much easier on PC.
