I'm all about this. I've actually been hoping for more country since the first game came out. Say what you will about the music (it's hit or miss for me), but the guitar playing is usually superb.
I'm guessing the only major barrier to getting a lot of it in the game is the genre's reliance on slide guitar (though we've been seeing a fair bit of that lately) and baritone guitars (which Rocksmith doesn't really support)
