Maybe not the most orthodox of RB opinions but for most circumstances I think it's much more worthwhile to play RB Pro Keys two handed. There are various reasons why. That's not to say people shouldn't 1 hand songs, but rather it's not really a must, and often 1 handed is a worse way of doing it.
Here are some good reasons:
RB3 Pro Keys charts are supposed to be playable with one hand but that doesn't mean much
Did you see the second keyboard solo of Frankenstein? How about Verse 1 of TTFAF? How about that chorus part of Roundabout with the guitar and keyboard playing simultaneously? Or the fast guitar solo chords of Frankenstein Teaser Trailer? Yes or no, they are quite similar in a way: they aren't one hand played by the original artist. It's not just a few select instances, either, many, perhaps the majority of these songs feature 2 handed sections or left handed sections. RB3 Pro Keys charts are not just right hand only.
Another idea, many of these songs are not even purely keyboard. Obviously it's mostly piano and synthesizer, but you can find instances in many songs (Weird Science, Shelter Me, Sir Duke, etc.) that are some kind of sax or horn section or something similar. Then there's songs like The Duel, which feature rhythm guitar on keyboard. Other times there's stuff like Chaotrope and rainbowdragoneyes, which isn't even humanly played to begin with, but programmed.
Then there's the basic idea that no one would ever FC or even do remotely well at many of the hard charts 1 handed. https://www.youtube.com/watch?v=k0LPqyFkkZo 0:49 is a good example of how it is. I'm not criticizing but this was approved for one hand, even though the best keyboardists on Earth would likely score maybe about 60% during solo 1 with a great attempt. Obviously no one is even close with 2 hands on expert.
It's very difficult to play a keyboard while focusing on a screen
Seriously. It isn't very hard to correctly hit notes fast while seeing hands, but while doing it on a lap while focusing on a screen, it's much harder. Something I could play easily on a piano with one hand becomes somewhat like a nightmare to do while focusing on a screen. It's very hard to estimate where notes are, and using two hands is a lot easier. Even if someone memorizes a song and just looks at a keyboard while playing RB3, the very hit-or-miss and strict timing of RB is still harder than the margin of error of playing piano.
RB3 keyboard is quite stiff, so one handing something with it isn't always easy
Though you can use another MIDI keyboard, this is still worthy of considering.
Playing 2 handed parts with 1 hand isn't accurate to how the keyboard played it anyway
So for the most accurate experience, playing a piano is more technically 1:1 accurate usually. Playing 2 handed or 1 handed RB3 doesn't mean one can play the original keyboard track, and someone who played the original keyboard track might find RB3 way more difficult to do it in.
People play piano almost always with two hands
So one handing doesn't prepare people well for using their non-dominant hand. Playing two handed parts or programmed parts, or whatever with one hand just causes it to usually be harder for yourself anyway.
